Here’s a step-by-step recipe to make lava cake (also known as molten chocolate cake), which has a warm, gooey center when you cut into it. It’s a delicious and decadent dessert!


Ingredients:

  • 1/2 cup (115g) unsalted butter 

  • 6 oz (170g) semisweet or bittersweet chocolate (chopped or use chips) 

  • 1 cup powdered sugar 

  • 2 large eggs 

  • 2 large egg yolks 

  • 1 tsp vanilla extract 

  • 1/4 tsp salt 

  • 1/2 cup all-purpose flour


Optional: A pinch of cinnamon or espresso powder (for extra flavor)


Instructions:


1. Prepare the Ramekins:


  • Preheat your oven to 425°F (220°C).
  • Grease four 6-ounce ramekins (individual baking dishes) with butter and lightly dust them with cocoa powder or flour to prevent the cakes from sticking.
  • You can also line the bottom of the ramekins with a parchment paper circle for easier removal.

2. Melt the Butter and Chocolate:


  • In a microwave-safe bowl, melt the butter and chopped chocolate together. You can do this in the microwave in 20-second intervals, stirring after each interval until completely melted and smooth.
  • Alternatively, you can melt the butter and chocolate in a heatproof bowl set over a pot of simmering water (double boiler method).

3. Mix the Wet Ingredients:

6. Bake the Lava Cakes:


  • Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes. The edges should be set, but the center should still look soft and slightly jiggly.
  • Keep an eye on the cakes to avoid overbaking. The key is to bake just enough so the outside is firm, but the center stays molten.


7. Serve:


Once baked, remove the cakes from the oven and let them sit for 1 minute. This helps the cake settle before serving.

Carefully run a knife around the edges of each ramekin to loosen the cake. Place a plate over each ramekin, then invert to release the cake onto the plate.
